DRESS UP YOUR SALAD WITH COCONUT OIL

This Tropical Island Salad Dressing is loaded with nutrients and all the many benefits of coconut oil. Drizzle it over mixed greens for a salubrious, summertime treat—you may also want to add a sprinkling of bacon bits for extra protein. Combine it with rice and serve cold on a bed of spinach or arugula, or hot as a delightful side dish with fish or pork. Spoon over fish or shrimp to add a surprising burst of tropical flavor.
COCONUT OIL PROVIDES THE DELICIOUS BASE FOR THIS DRESSING, WHICH MAKES ABOUT 10 3-OUNCE SERVINGS.
3⁄4 cup coconut oil
1⁄4 cup pineapple juice
1⁄2 cup pineapple
1⁄2 cup macadamia nuts
Combine all ingredients in a high-speed blender. Blend until all ingredients are emulsified.
This sweet and nutty dressing is so versatile, you’ll probably think of a dozen different ways to enjoy it. Try it over vanilla ice cream, or as a topping for white or yellow cake. Or, how about on pancakes instead of syrup?
